Wholemeal Blueberry Pancakes…Easy Like Sunday Morning!

Hey There!

Just a quick share on some delicious pancakes currently hanging out in my happy tummy. The only thing easier than making these pancakes is eating them, and maybe reading a good book in a hammock… yep that’s pretty easy too (and what i’ve been up to on this lovely Sunday morning).

Wholemeal Blueberry Pancakes (adapted from this recipe)

1 1/4 cup of wholemeal flour
2 tps baking powder
1 egg
1 tsp cinnamon (or to your taste)
1 tsp vanilla extract
1 cup of milk (+ a spash more if only using 1/2 cup blueberries)
1 pinch salt
1 tlbs sugar (i use rapadura)
1/2 – 1 cup frozen blueberries
coconut oil for frying

Thaw frozen blueberries in the microwave for 30 seconds in a small bowl, set aside
Sift all dry ingredients into a bowl
Whisk all wet ingredients in another bowl
Heat a medium pan on low-medium gas heat (medium for electric stoves)  and add a tbls of coconut oil
Combine the wet and dry mixes together with a fork, be careful to not over mix (some remaining clumps are a good thing!)
Add the blueberries to the mix lightly
Using a 1/3 cup measuring spoon, heap 1 spoonful of mixture into the pan. Be patient, when you see bubbles popping 1/3rd of the way from the pancake edge and the batter around the bubble doesn’t close the hole up, the pancake is ready to flip.
Repeat using all the batter (6-7 pancakes) and use more coconut oil when needed
Serves 3
Enjoy on their own or with a high quality topping ( we had a little honey with ours, yum!)
